Pecan Encrusted Salmon is Good Enough for Company

This recipe is company good.  We have served this many a time for people and they always have compliments, and usually request the recipe.

 

PECAN ENCRUSTED SALMON

 

4 salmon fillets

Salt & Petter

2 Tbsp Dijon mustard

2 Tbsp butter

2 Tbsp honey

1/4 cup soft bread crumbs

1/4 cup chopped fresh parsley

1/4 cup chopped pecans

 

Place fillets skin side down in a lightly greased pan; sprinkle with salt and pepper  Combine Butter, mustard and honey; spread over fillets.  Combine bread crumbs, parslet and pecans; spoon mixture over fillets.  Bake at 450 degrees for 10 minutes or until fish flakes.  Yield:  4 servings.

Note:  May be prepared in advance, refrigerated and baked after guests arrive (during cocktails).
